Christmas 4-course goose menu

FIRST COURSE
Tartare and grilled yellow fin tuna with white tomato foam, confit cherry tomatoes and avocado or pink roasted saddle of veal with vinaigrette of chopped egg, capers and radishes

SECOND COURSE
Foamed chestnut soup with young leek and Périgord truffle or essence of wild mushrooms with semolina dumplings, beech mushrooms and chervil

THIRD COURSE
Fried scallops with potato blini, beurre blanc and braised onion or crispy fried turbot, with carrot puree, leaf salad sauce and crispy wild shrimp

FOURTH COURSE
Simmenthal beef fillet au gratin with potato mousseline, wild broccoli and almond butter or saddle of venison wrapped in spices with celeriac puree, herb mushrooms and Brussels sprout leaves

FIFTH COURSE
Rum pot mousse with gingerbread sponge cake and plum sorbet or French cheese selection from Affineur Waltmann with chutneys and fruit bread.
